Windham Flora is the first release of their coolship beers. 100% spontaneously fermented, using only the wild microbes from Hermit Thrush's adjacent woodlands and winds. No yeast added. Aged for 21 months.
Wild native yeasts offer an experience steeped in Vermont’s complex terroir, the basis for all that we dream up. Thrush exclusively uses their our own wild yeast and native mixed-fermentation cultures from Brattleboro, which develop their signature fruity, phunky, and tart flavors, giving their sour beers a distinctly Vermont taste you won't find anywhere else. They source much of their grain, hops, barrels, and fruits from farms located within 40 miles of their brewery.
